🍛 Warming Chickpea Curry 📷 by  @thehappypear via  @vegangotgame  #vegangotgame Recipe: YIELD: 2-3 SERVINGS 1 tablespoon coconut or neutral-flavored oil 1 medium yellow onion, diced 2 cloves garlic, finely chopped 2 teaspoons finely chopped fresh ginger 1 teaspoon curry powder 1/2 teaspoon turmeric 1 teaspoon coriander 1 teaspoon cumin 1 can (15 ounces) crushed tomatoes 1 can (15 ounces) chickpeas, drained, and rinsed well 1/2 cup full-fat coconut milk 1 cup fresh baby spinach leaves, loosely packed 1 teaspoon lime juice 1/4 cup cilantro leaves, roughly chopped, plus more for garnishing kosher salt freshly ground black pepper DIRECTIONS: Heat the oil in large skillet over medium heat. Add the onion, salt lightly, and sauté for 8 to 10 minutes, stirring occasionally, or until the onion is very soft and translucent. Add the garlic and ginger, and sauté for an additional minute or so. Add the spices and sauté, stirring constantly, for 30 seconds or until aromatic. Add the crushed tomatoes, chickpeas, coconut milk and bring to a very low simmer. Cook for 10 to 15 minutes. Add the spinach leaves and stir to combine. Bok Choy with mock chicken in coconut milk 😋😌( tastes almost close to Thai yellow curry 😋) Ingredients 1. Mock chicken 2. 1 - 2 cup Coconut milk (second milk) 3. 1 tsp coconut oil 4. 3 garlic clove, thinly sliced 5. Ginger 3 inches 6. 2 tsp turmeric 7. 3 Bok Choy 8. 5 small onions 9. 1 tbsp soy sauce 10. Chilli flakes 11. Basil leaves 12. Coconut oil a. Add coconut oil in a kadai and sauté ginger , garlic and mock chicken . b. Add coconut milk + turmeric + salt mix well and let it boil c. Add Bok Choy and small onions , reduce the flame , cover and cook until Bok Choy is cooked d. Add soy sauce + chilli flakes + fresh basil leaves and cook for 1 minute. f. my amazing, refreshing post-workout lunch!! I love fruit SO MUCH (if you can’t tell lol) I feel like fruit is just picks you up and gives you so much energy!! Is it just me or do you guys feel the same way?! We had off of school today because of Martin Luther King Jr. day♥️♥️ andddd tomorrow we have a 2 hour delay because it is sooo cold! Today it got down to -6 DEGREES FAHRENHEIT WIND CHILL!!! THAT’S -21 DEGREES CELSIUS!!! So I spent the whole day inside which was fine by me😂 Have an amazing week😘! -h♥️♥️

Had a blast this weekend having a pizza and wine night Friday, going to breweries Saturday, and spending time with James's sister, niece, nephew, and his parents on Sunday. We treated ourselves to some cookie sandwiches 🍪 I think it's important to fully enjoy the weekend and not feel guilty about eating some of your favorite foods. A recent post by  @inspiralized discussed how eating unhealthy foods is part of your healthy lifestyle bc you have your entire LIFE to eat food. So sometimes you will eat clean & other times there will be different things or events going on where you will eat less nutritious foods/ drinks. For me, I like to meet up with friends and eat out meals on the weekends, so when the week starts again I'm ready & excited to cook some meals for the week. _____________________________________________________________.For tonight's dinner I used the Trader Joe's kale salad mix & topped it with roasted veggies and honey ginger dressing. I didn't use the toppings from the kit since I was already adding so many of my own 😂 I roasted chick peas, squash chunks, brussels, and broccolini at 425 for 20ish mins. For James's salad I roasted green beans, peppers, potatoes, and Trader Joe's jalapeño chicken sausage. Lastly I added a lil crushed red pepper to the broccolini at the end and put small chunks of a pink lady apple & a lil dressing over the top of the salad. 🧁HEALTHY VEGAN BREKKIE MUFFINS🧁 Getting back into the grad school grind means I have to plan accordingly to make sure I’m properly fueled to get all of the other things on my to-do list done. These are super simple and the measurements are all estimated, the recipe itself is subject to variation depending on the flavor that you’re in the mood for! I took the photo of the base recipe, but I’ve had so much fun mixing up various add-ins every week to keep my meal prep interesting! Some of my favorites I’ve made to date: peanut butter banana, coconut berry, and apple cinnamon! 🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁 INGREDIENTS: - 3 cups rolled or quick oats (blended into flour consistency) - 1 tsp baking powder - 1 tsp cinnamon - 45g unsweetened applesauce - 1-1.5 very ripe bananas - 3 heaping tbsp of ground flaxseed - 1/2 c rolled oats - 1 c unsweetened vanilla dairy free milk alternative (I used cashew milk) - 1-2 tbsp nut butter of choice (I used almond butter) 🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁🧁 DIRECTIONS: 1. Combine all dry ingredients except flaxseed in bowl. Preheat oven to 350 F. 2. Combine flaxseed and 1/2 c cashew milk on the side and stir until even consistency. Let set until it thickens naturally. This should take about 2 minutes. 3. Smash bananas with fork in bowl and mix with applesauce. 4. Combine all ingredients and stir with spoon until thick pancake batter consistency. Add nutmilk as needed to reach desired consistency. Add desired extras at this step! 5. Pour into eco-friendly compostable muffin tins and bake for 25-30 minutes. Check on every once in a while to avoid over-baking. 6. Remove when the tops of the muffins are firm but the body of the cake is still springy. Pop in tubberware and cover with paper towels within container to contain moisture. Refrigerate until it is time to enjoy. Top with coconut yogurt, cacao nibs, and berries to serve!

Honestly, I feel bad for my friends who don’t use oils. You are making life so much harder for yourself! I mean, like what are you using when you feel like crying bc you just ate an entire box of cookies? Or whole pizza? Or when the kids are being a pain in the ass and won’t calm down? Or when it’s 10pm and they won’t sleep? Or when your confidence is in the shitter? Or you had a horrible day at work and you got your patient’s shit on your shoe? ( oh wait, that doesn’t happen to people outside of healthcare 💩😝) or what about when your body is totally out of place and you feel 95? 👵🏼 or when your significant other won’t stop snoring? Or when the kids think there’s monsters under the bed? 👹( I made monster spray for the boys that struggle with fear at bedtime) or when you need a “Chiropractor in a bottle”, or when you want to calm the F down in an epsom salt bath? Qué bonitas salieron hoy las veggieburger, verdad? Y además riquísimas 😋 El secreto es darles su espacio, todo el mundo necesita espacio y las burger también. 😂 Quiero decir, que preparé un rehogado de cebolla, le añadí zanahoria y tofu rallados, perejil fresco y unas cuantas especias en polvo. Mientras tanto molí un puñado de copos de avena con una cucharada de lino y cuando estaba el rehogado lo junté todo. Aquí es donde hay que darle espacio, porque la avena necesita un ratito para absorber el líquido del resto de alimentos y que nos quede una masa bien compacta que no se desmiga ni se rompe. Como media horita más o menos. A partir de aquí no hay más que darles forma y meterlas al horno 20 minutos. Perfectas!!!!

Taco Tuesday is coming early for me this week (fun fact: everything is better in a tortilla). Thanks to some meal prep, I whipped up this lunch in about 10 minutes. In these tacos I have mixed greens, sweet potato, spiced black beans courtesy of  @americas_made, avocado, and sriracha from  @fusiongourmet. PSA to all my vegan followers: fusion gourmet is an awesome brand that is currently trying to expand its vegan options. I highly recommend you check them out and try their Tuscan crisps, tea candies, and of course this yummy hot sauce.
